Peanut Butter and Strawberry Chia Jam Sandwich

You can’t beat the classics! As a kid, PB & J sammies were my all-time favorite meal I’d look forward to in my school lunch box (thanks Mom!). Now that I’m older, it was time for me to make a way healthier version of my childhood guilty pleasure and call it a peanut butter and strawberry chia jam sandwich!

One step to making your PB & J healthier is as simple as making your own jam without all those unnecessary ingredients found in store-bought jellies. Then, choose a peanut butter with the only ingredient being, you guessed it, peanuts! Finally, select a minimally processed bread. (I SWEAR by Food For Life brand!).

Amp up your PB & J game you loved as a kid and try this for lunch this week!

Peanut Butter and Strawberry Chia Jam Sandwich

Ingredients:

2 slices bread of choice

peanut butter goes on one slice

strawberry chia seed jam on the other slice (recipe below!)

Optional: toast your bread to enjoy it hot and it’s basically dessert!

For the strawberry jam:

1 package strawberries, finely chopped

3-4 tbsp of maple syrup

2 tbsp chia seeds

Instructions:

  1. Transfer chopped strawberries to a saucepan over medium heat and add maple syrup
  2. Keep an eye as the mixture begins to soften and stir throughout. The strawberries will start to separate and form a jam
  3. Use a potato masher or utensil to break up strawberries further then continue to stir
  4. Once the mixture bubbles, add chia seeds and reduce to low heat to stir for about 15 minutes until desired texture is achieved. You can leave it chunky or transfer to a food processor for a smoother jam.
  5. Let cool to room temperature and store in the fridge. The jam will get thicker as it stays cool!
