Do you ever go to a coffee shop, order a snack with your coffee…and then… attempt to re-create it yourself? Just me?? These delicious and no-bake almond butter cranberry bites were inspired by one of my favorite coffee shops at the shore. (s/o to Out There Coffee shop in Cape May!) P.S. this place is seriously SO good, and I highly recommend it for their coffee and even tasty snacks like these. Plus, they have a ton of dairy free milk alternatives (yes, even oat milk) and plant-based eats!
Now for the recipe – I have no idea what was actually in these little bites of heaven. I trusted my taste buds here and experimented in the kitchen! They are pretty much identical to the ones at the coffee shop, but catch me there all summer still going back to buy them. They were THAT GOOD 😉

Almond Butter Cranberry Bites
Ingredients: (makes about 10 bites)
1 cup dried cranberries
1 cup rolled oats
1/2 cup almond butter (I used the raw, crunchy one from Trader Joes!)
1/4 cup agave (sub maple syrup)
2 tbsp hemp hearts
Instructions:
- Combine all ingredients in a bowl and mix until well combined. Store your dough in the fridge for about 10 minutes to chill to make it easier to shape!
- Remove from the fridge and form dough into bite size balls and store back in the fridge until you’re ready to enjoy them! Tip: heat in the microwave for a 10 seconds – they will just like a cookie from the oven!
