Love a classic Caesar salad? SAME. Let’s make it plant based! Caesar salads go way back for me as a staple when I was a kid. Luckily, Trader Joe’s came in so clutch with their new vegan Caesar dressing that tastes just like the real thing! Next time you’re craving a fresh Caesar salad as a light meal or side dish, try this one 🙂
Kale Caesar Salad with Crispy Spiced Chickpeas + Homemade Croutons
Ingredients:
• Baby kale
• Crispy spiced chickpeas + homemade croutons using Food For Life Baking Co. sesame Ezekiel bread (deets for both below and I personally loveee making these for meal prep!)
• Shredded green and red cabbage
• Organic blueberries
• Violife brand parmesan wedge cheese +
• Cherry tomatoes
• TJ’s vegan Caesar salad dressing
Instructions:
for the spiced chickpeas – preheated my oven to 350 F and drained/washed a can of chickpeas. Next, I added avocado oil to a baking sheet with the chickpeas. Tossed them in some of my favorite spices, not measuring but coating them evenly (turmeric, cumin, and curry powder). Baked for about 15 mins then tossed them around in the pan to make sure all sides are baking evenly. Baked for another 15 or so until they were crispy. I store any leftovers in the fridge and use them in other meals for the week!

for the croutons – use any bread you have! I had my croutons in the oven simultaneously with the chickpeas, but they were done a little quicker. Again, I added avocado oil to a baking sheet then broke up about 3 pieces of bread into mini squares. For more flavor, you can add spices/herbs to them! I used fresh parsley and TJ’s onion salt seasoning … SO good. Bake these until golden brown, checking on them frequently! You can keep any leftovers in your pantry if you’re using again in the same week or otherwise I’d keep in the fridge 🙂
* Prepare your salad in a bowl and wash/cut all of your produce. Toss in the chickpeas, croutons, + dressing and enjoy!
