Let’s talk meal prep! I loved making these huge refreshing salads in the summer and decided it was time to bring these back. The pics looks deceiving, but there’s actually two bags of lettuce in there! You can get creative with toppings each week and switch up your dressing each day. I prepped this one for a few lunches this week to get me through the work grind and it is the BEST! I didn’t measure out a whole lot here, but all ingredients are listed below. Combine everything in a large bowl and store in the fridge!
Ingredients:
1 bag kale lettuce
1 bag arugula
homemade BBQ chickpeas (recipe coming soon!)
Blueberries
Beets
Rainbow blend cherry tomatoes
1 bag Trader Joe’s steamed lentils
1 bag raw broccoli
Hemp hearts
dressing of choice (added when serving or otherwise, your greens can get soggy!)
