Roasted Red Pepper Hummus Pasta Sauce

Hummus as a pasta sauce?! Your life will be forever changed once you try this! It requires only four ingredients (not including the pasta you pair it with and seasonings/toppings). You can use any store-bought roasted red pepper hummus or feel free to make your own. It’s so creamy and hearty and the perfect weeknight or Sunday pasta dinner for your family!

Ingredients:

1 tub roasted red pepper hummus (I used Cava brand found at Whole Foods)

• 1 pasta box of your choice (using Banza’s cavatappi chickpea pasta)

• 1/2 sliced yellow onion

• 1 package cherry tomatoes, halved

• 1 bag fresh spinach (or as much as you’d like)

• salt/pepper to taste

Instructions:

1. Cook pasta according to box instructions. Reserve 1/2 of the water once fully cooked. Set pasta aside.

2. While the pasta is cooking, heat oil in a saucepan over medium heat and sauté onions for 2-3 minutes. Add in the tomatoes and cook for another 2 minutes.

3. Add hummus to the saucepan and slowly stir in the pasta water until creamy. Add spinach and cook until wilted.

4. Transfer cooked pasta into the saucepan and stir until fully coated with the sauce and add salt/pepper or extra spices if desired. Top with basil, cheese, etc. and enjoy!
