Time to squeeze the day! These soft 3 ingredient lemon cookies are perfectly tart and refreshing. Oh, and they make your kitchen smell SO amazing!

If you LOVE lemon desserts, this will become a new baking staple for you with the most simple ingredients. You may even have them at home already! Zesting the lemon makes all the difference here without it being too sour or overpowering. Then, the maple syrup balances out the tart flavor with natural sweetness. Finally, the almond flour makes for a healthier alternative to baking flour for a delicious cake-like cookie!

3 Ingredient Lemon Cookies

Ingredients: (recipe makes 8-10 cookies)

1 cup almond flour (coconut flour would be good too!)

1/4 cup pure maple syrup

1 lemon

Instructions:

1. Zest and juice one lemon.

2. Combine both the lemon zest and lemon juice with the almond flour and maple syrup. Stir until well combined.

3. Freeze for 10-15 minutes and preheat your oven to 350 degrees. Line a baking sheet with parchment paper.

4. Remove from the freezer (you may need to add a bit more almond flour here until it reaches a thicker dough-like consistency!)

5. Roll the dough into tiny balls and place them on your baking sheet. Press with your palm to flatten the cookies a bit. Use a fork to lightly make a ‘criss-cross’ design on each cookie.

6. Bake for 10-12 minutes and let cool before enjoying. I stored my leftovers in the fridge to preserve their freshness since they are made with all natural ingredients!
