THIS is how you do fajita night 😍🌶 Who said that eating plant-based means that you can’t enjoy restaurant-style veggie fajitas?! You can be as versatile as you want with this meal. I chose to use rainbow peppers, onions, and mushrooms this time around, but you can also add an additional plant protein like black beans!
The best part? It’s made with homemade fajita seasoning that is so easy to throw together and incredibly flavorful. You may already have these spices (if you’re a spice freak like me) in your pantry at home! I promise you will NOT miss those store bought fajita packages with unnecessary ingredients 😋
Serve these fajita style veggies in a warm tortilla and you have a delicious weeknight dinner for the whole family. I made the biggest batch of this to purposely have in rice bowls for lunch all week – highly recommend!

Veggie Fajitas
Ingredients:
Red, yellow, and orange peppers (as many as you’d like)
1 container button mushrooms
chopped onions
* For the seasoning
1 tbsp cumin
1 tbsp sea salt
2 tbsp chili powder
1.5 tsp onion powder
1 tbsp oregano
1.5 tsp garlic powder
1.5 tsp black pepper
1 tbsp paprika
optional for extra spice ~ 1.5 tsp cayenne pepper
Instructions:
1. Mix the spices together and sprinkle on your prepared veggies before placing in the oven.
2. Bake at 375 F for about 25 minutes or until tender. You can also cook right on the stove top.
3. Serve in a flour tortilla or rice bowl!
