To any curry fans out there, you need this easy eggplant curry in your life!! ⁣
Made with chopped eggplant, minced garlic, mild curry paste, canned coconut milk, chopped red bell peppers, and spices (onion powder + paprika) all in one pot!⁣

Eggplant Curry

Ingredients:

• one eggplant ⁣⁣
• 1 red bell pepper⁣
• 1 tsp minced garlic ⁣⁣
• 4 tbsp mild (or spicy) curry paste ⁣⁣
• 1 can coconut milk ⁣⁣

~ eyeballed the spices above 😂 ⁣⁣
Served over brown rice and topped with cilantro⁣⁣.

Instructions:

  1. Add a little olive oil to a pot and sauté your eggplant, peppers, and minced garlic for about 5 minutes. 
  2. Once softened, add coconut milk, mild curry paste, and the spices. Let cook for another 15-20 minutes and stir occasionally (don’t let the eggplant get too mushy!) and you’re done!
