To any curry fans out there, you need this easy eggplant curry in your life!!
Made with chopped eggplant, minced garlic, mild curry paste, canned coconut milk, chopped red bell peppers, and spices (onion powder + paprika) all in one pot!
Eggplant Curry
Ingredients:
• one eggplant
• 1 red bell pepper
• 1 tsp minced garlic
• 4 tbsp mild (or spicy) curry paste
• 1 can coconut milk
~ eyeballed the spices above 😂
Served over brown rice and topped with cilantro.

Instructions:
- Add a little olive oil to a pot and sauté your eggplant, peppers, and minced garlic for about 5 minutes.
- Once softened, add coconut milk, mild curry paste, and the spices. Let cook for another 15-20 minutes and stir occasionally (don’t let the eggplant get too mushy!) and you’re done!
