Finally, September – let’s start it off with a bang with PUMPKIN SPICE GRANOLA! This recipe made such a large batch (two baking sheets worth), and it’s the perfect healthy snack or breakfast.
All you need is a few simple ingredients and spices and about 40 minutes of time to bake in the oven. You can feel free to add nuts or dried fruits for more textures and flavors, too! Your kitchen will be smelling SO good while this bakes 😊 I hope you enjoy it!
Ingredients:
Pumpkin Spice Granola

• 3 cups rolled oats
• 3/4 cup pumpkin purée
• 1/2 cup maple syrup (can sub agave or honey)
• 1/4 cup any milk
• 1/4 tsp ground ginger
• 1/4 tsp allspice
• 1/8 tsp nutmeg
• 1/2 tsp cinnamon
• 1/2 tsp vanilla extract
* optional: pecans, pumpkin seeds, and/or cranberries!
Instructions:

1. Preheat oven to 325 degrees and line
two baking sheets with parchment paper.
2. Add the wet ingredients to a bowl: pumpkin purée, milk, maple syrup, and vanilla. Stir in all the spices next!
3. Add your rolled oats to the batter a little at a time and combine well. If desired, you can add in optional nuts after the oats are incorporated. If you decide to add dried fruit, wait until the very end once the granola is finished in the oven!
4. Spread the granola evenly across the baking sheets. Bake for a total of 40 minutes (stopping every 10 minutes to stir the granola around the pan).
5. Let completely cool before storing. I recommend storing them in glass jars or containers!
