Candy Irish Potatoes

Irish potato season is here! You can’t find a vegan version in the stores, so let’s make them at home. In comparison to store-bought, you’ll have to store this recipe in the fridge because they’re made with all fresh ingredients – trust me you’ll taste the difference!

Run and go make these for St. Patty’s ASAP!

Ingredients:

• 1 container any dairy free cream cheese

• 2.5 cups unsweetened shredded coconut

• 1/4 tsp any vanilla protein powder

• 1/4 cup agave, maple syrup, or other liquid sweetener

• pinch of sea salt

Instructions:

1. Blend all ingredients in a food processor (save the last .5 cup of the shredded coconut towards the end of blending) until smooth but firm

2. Form dough into tiny balls on parchment paper and coat in cinnamon

3. Refrigerate for at least 30 minutes or until they firm up and enjoy!
