The fact that it only take three ingredients to make these cookies is mind-blowing to me. Coconut, chocolate, dates…that’s it! These healthier Girl Scout Cookie Samoas are totally about to bring you back to your childhood, but let’s leave out all the unnecessary ingredients. These little bites of heaven are naturally sweetened with dates and take almost no time to make. I’m making it a tradition to make these every Girl Scout cookie season, and I hope you will too!
Ingredients: (recipe makes 11 cookies)
1 cup pitted dates
1 cup unsweetened shredded coconut
1/3 cup dairy free dark chocolate chips

Healthier Girl Scout Cookie Samoas
Instructions:
- Add dates and coconut into a food processor and pulse until a dough-like consistency forms
- Remove from food processor and line a baking sheet with parchment paper
- Roll dough into balls and flatten with your palm to make round. Use a straw to poke a hole in the middle for that official Samoa cookie look!
- Place the baking sheet with the cookies in the freezer to harden and heat up your dark chocolate chips in the microwave while you wait (I did about 30 second increments until smooth)
- Remove your cookies from the freezer and dip each cookie bottom in the chocolate. Us the remaining chocolate to drizzle on top! Transfer the cookies back in the freezer to cool until chocolate is completely hardened (about 15 minutes)
- Store in the fridge for up to one week in a container or freeze for later
