If your lunch today wasn’t this colorful and photogenic…did you even eat lunch? 🤭🌈 I was craving just a simple avocado toast, but then I remembered I bought this amazing beet pesto over the weekend. (100% you need this brand in your fridge RN!). Not only is it the ~prettiest,~ but it’s SO delicious.
A little back story on the beet pesto: I took a trip to Whole Foods and randomly stumbled upon this brand, Do Anything Foods. I love beets, but I never thought to enjoy them like this! Their hummus was made with all natural ingredients, so it actually expired pretty quickly. (Good thing I devoured the whole jar to myself in a week’s time!). Now that I’ve entered a whole new beet pesto world, I will not be going back!

Avocado and Beet Pesto Toast
Ingredients:
Bread of choice (Food For Life Ezekiel bread used here)
Beet pesto (used Do Anything Foods but you can make your own!)
1 small avocado
Fresh arugula
Trader Joe’s everything but the bagel seasoning
Hemp hearts
Balsamic to drizzle

Instructions:
1. Toast your bread and slice avocado while you’re waiting.
2. Spread the beet pesto evenly on your toast.
3. Top with avocado and the rest of your toppings. Enjoy!
