Cherry Tomato Green Bean Salad
Ingredients:
2 cups cherry tomatoes, cut in half
16 oz package green beans (note: the crunchier the green beans, the better!)
sliced fresh basil, as much as you like
for the dressing:
2 tsp minced fresh garlic
1/2 tsp dried oregano
2 tbsp fresh squeezed lemon juice
3 tbsp olive oil
1/2 tsp sea salt
Instructions:
- Make the dressing by whisking together the above dressing ingredients and let sit in the fridge.
- Steam your green beans and rinse them with cold water. Transfer them in a bowl with cherry tomatoes (cut in half) and fresh basil.
- Toss in your dressing to the salad bowl and serve cold!
