Avocado Corn Tomato Salad

This colorful salad combination = summer in a bowl! This recipe was a new take on classic tomato salad by adding in the crunchy corn and yummy avocado.

If you’re looking for something quick and easy to make for a summer BBQ, this is a must-try. This is the perfect light and refreshing side dish that is sure to please everyone! It’s tossed in a lime and olive oil dressing with just a touch of sea salt that doesn’t take away from the fresh vegetables. Fair warning: you’ll be asked by your friends and fam to make this one again and again!

Avocado Corn Tomato Salad (serves 4)

Ingredients:

1 ripe avocado

1 container cherry tomatoes

2 tbsp chopped red onion

3 tbsp fresh cilantro

2 ears corn

1 cup romaine lettuce (spinach would be good, too!)

1 tbsp lime juice

2 tbsp olive oil

 sea salt to taste

Instructions:

  1. Wash all produce well with cold water. Add your lettuce to a large serving bowl.
  2. Cut up your avocado and slice into small cubes. Chop cherry tomatoes (in half), red onions, fresh cilantro, and the ears of corn and add everything to the lettuce bowl.
  3. Make a light dressing using lime juice, olive oil, and a little sea salt. Coat the salad and toss well. You can add more sea salt at the end, if desired!
  4. Serve immediately or store in the fridge in an airtight container. (The avocado will start to brown the longer you wait, so it’s best to enjoy fresh!).
