If you’re looking for something quick and easy to make for a summer BBQ, this is a must-try. This is the perfect light and refreshing side dish that is sure to please everyone! It’s tossed in a lime and olive oil dressing with just a touch of sea salt that doesn’t take away from the fresh vegetables. Fair warning: you’ll be asked by your friends and fam to make this one again and again!
Avocado Corn Tomato Salad (serves 4)
Ingredients:
1 ripe avocado
1 container cherry tomatoes
2 tbsp chopped red onion
3 tbsp fresh cilantro
2 ears corn
1 cup romaine lettuce (spinach would be good, too!)
1 tbsp lime juice
2 tbsp olive oil
sea salt to taste
Instructions:
- Wash all produce well with cold water. Add your lettuce to a large serving bowl.
- Cut up your avocado and slice into small cubes. Chop cherry tomatoes (in half), red onions, fresh cilantro, and the ears of corn and add everything to the lettuce bowl.
- Make a light dressing using lime juice, olive oil, and a little sea salt. Coat the salad and toss well. You can add more sea salt at the end, if desired!
- Serve immediately or store in the fridge in an airtight container. (The avocado will start to brown the longer you wait, so it’s best to enjoy fresh!).
