Tired of boring salads? Craving something refreshing for lunch or dinner? This golden lentil apple salad is the one for you! I knew as soon as I was tossing these fresh ingredients together that I’d definitely be repeating this one again and again.

Real talk: if you haven’t tried chopped apples on your salads yet, you’re seriously missing out! They provide the perfect crunch, and it’s a great way to get that apple a day in. Combine the crisp apples with golden lentils, dried cranberries, pumpkin seeds and a light dressing, and you have the perfect refreshing salad for lunch or dinner. Not only is this combination so delicious, but it’s surprisingly filling with the extra protein from the lentils and pumpkin seeds.

* recipes notes ~ 1.) I used spinach here for my salad base, but you can use whatever you have on hand or like best! (Kale is definitely on my list to try next with this combination). 2.) I made extra golden lentils to easily reheat or add to other meals for the week. (Highly recommend!).

Golden Lentil Apple Salad

Ingredients:

lettuce of choice (I used @organicgirl spinach)

1 apple, chopped (honeycrisp was SO good here!)

large celery stalk, finely chopped

1 cup cooked golden lentils

topped with: dried cranberries, pumpkin seeds, oil, vinegar, squeeze of 1/2 lemon!

Instructions:

  1. Wash lettuce, celery, and your apple well in cold water. Chop up your apple and celery into small pieces.
  2. Add in your cooked lentils. You can let them cool before mixing in to your salad or serve hot right on top.
  3. Top with the cranberries and pumpkin seeds and drizzle on oil, vinegar, and lemon. Toss and enjoy!
