Eyeing up those chia seed pudding pictures all over your Instagram feeds? Wondering how to make it yourself? This vanilla chia seed pudding recipe is the perfect and easy base that works every time. Think of it as a starting point, just like vanilla ice cream!

Chia seed pudding is one of the most easiest treats to prep for breakfasts in the morning or a filling snack! It’s creamy, packed with protein, and so delicious. It comes together in almost no time with such simple ingredients! Add your ingredients in a mason jar or airtight container, mix well, then store in the fridge overnight. When you’re ready to eat, you can transfer your pudding to a bowl or mug like this one. (10/10 recommend doing this to make room for toppings!)

Note* it’s crucial to get the chia seed to milk ratio just right in order for it to thicken properly in the fridge, so make sure you’re strict with it 🙂

Vanilla Chia Seed Pudding

Ingredients:

2 tbsp chia seeds

1/3 cup any plant milk (I used almond)

1/2 tsp vanilla extract

optional sprinkle of ground cinnamon

*toppings used here:  @foodforlifebaking golden flax sprouted crunchy cereal, fresh berries, @manitobaharvest hemp hearts, and agave for a touch of sweetness

Instructions:

  1. Add chia seeds, milk, vanilla extract, and optional cinnamon to your mason jar or container. Give it a good stir to combine!
  2. Seal your jar or container and store in the fridge overnight. (You can keep it in the fridge for up to four hours as well to achieve the right texture!)
  3. Remove from the fridge when you’re ready to eat and add toppings if desired!
