Alexa, play “Watermelon Sugar” 🍉Is there anything that says summertime more than a fresh watermelon arugula salad? This will seriously cool you off on a hot day!

I personally love adding fresh fruit to salads, especially in the summer. How about you? If so, then you’ll LOVE everything about this refreshing and healthy salad bowl all summer long! I was inspired to start adding watermelon to salads a few summers ago, working as a waitress at a hotel on the beach. I remember trying this watermelon, arugula, and feta cheese trio out for the first time there – and I was instantly hooked! Now, I’m always looking to put my own little spin on this classic summery favorite.

Combined with the juicy fruit and veggies, the farro, pine nuts, and vegan feta make it a hearty lunch or dinner. Oh, and we can’t forget the balsamic glaze and fresh mint that totally just make every dish better!

You can buy your watermelon pre-cubed, but I highly recommend buying a fresh watermelon and cutting it yourself. You can just taste the difference! Plus, you’ll have extra watermelon to put to good use throughout the week in other recipes (or more salads like this one!).

I promise you, this is an ELITE salad combo!

Watermelon Arugula Salad

Watermelon Mint Arugula Salad

Ingredients:

fresh watermelon, cubed

cooked farro

arugula

fresh mint

cucumbers, chopped

your favorite plant-based feta cheese alternative (@violife_foods vegan feta used here!)

pine nuts

balsamic glaze dressing

Instructions:

  1. First things first, wash your produce!
  2. Cook farro to box instructions (I use a rice cooker!)
  3. Cut up your watermelon into cubes, if buying fresh. Then, chop up your cucumbers and mint.
  4. Add everything to a bowl over arugula leaves and sprinkle with your favorite cheese, pine nuts, and balsamic glaze. Enjoy!
