Chili season + pumpkin season = 🎃 PUMPKIN CHILI 🌶 Pumpkin isn’t just for the desserts! This is a must try in the fall and the perfect warm dinner after a long day. All you need is about a half hour, a few simple ingredients, and your favorite dinner bowl!

Pumpkin Chili

Ingredients:

~ 1 bell pepper
~ 1 can beans of choice (I used pinto because that was all I had but black beans would be good too)
~ fresh corn, didn’t measure
~ 2 garlic cloves
~ 1 onion
~ 1 can pumpkin purée
~ 1 can fire roasted tomatoes
~ 1/2 tsp Trader Joe’s chile lime seasoning …trust me on this 👀
~ 1 tsp cumin
~ salt and pepper to taste
~ 1 tbsp olive oil
~ top with avocado, cilantro, + whatever you prefer!

Instructions:

• In a large pot over medium heat, saute the onion, then add in garlic and bell pepper until softened.

• Add the remaining ingredients and stir well. Cover the pot and let simmer for 20 minutes over low heat, stirring occasionally.

• Serve with your favorites! Avocado, cilantro, tortilla chips, sour cream, cheese, etc.
