The obsession with making jackfruit burrito bowls is REAL. Can anyone else relate? Special thanks goes to Trader Joe’s for always satisfying those Mexican cravings for me 👏🏻 I seriously cannot leave the store without it! Whether you’re trying to eat less meat or simply looking to spice up your average burrito bowl, pulled jackfruit is your fav new addition. Your mind will be ~blown~ with how much it will remind you of pulled pork or shredded chicken. I like to switch up the seasonings I use each time, but this combo was such a winner 😍

Jackfruit Burrito Bowls
Ingredients:
1 tbsp oil or spray of choice (I used avocado oil spray)
Canned jackfruit in water (used Trader Joe’s here)
1 tsp paprika
1 tsp onion powder
Coconut aminos or soy sauce (didn’t measure but drizzled on at the end)
1 tsp cumin
1 tbsp nutritional yeast
Mix-ins of choice: I used brown rice, peppers, black beans, corn, and avocado!
Instructions:
1. Drain water from the can of jackfruit and shred cubes with a fork.
2. Heat a pan with oil over medium heat and add in your jackfruit.
3. Add the paprika, cumin, onion powder, and nutritional yeast to the pan and stir to combine thoroughly.
4. Cook for about 5 minutes until golden brown. At the last minute, I added a few drizzles of coconut aminos. This really heightens all the spice flavors!
5. Add your jackfruit to your burrito bowl filled with all of your favorite toppings and enjoy!
