Hello, brunch at home! I’m thinking that I totally mastered this whole brunch at home thing with this delish and easy vegan blueberry banana french toast! I am that kind of person that could eat brunch food all day long (and every day), and this is one I’ll definitely be recreating.
These days, it’s easier than ever before to find egg replacers for recipes. For this one, the egg replacer here is chickpea flour! Don’t worry, you will not taste chickpeas at all while you’re devouring these protein-packed stacks. However, what you have is a way heart healthier alternative to classic french toast we all know and love!

Blueberry Banana French Toast
Ingredients:
your favorite bread (Food for Life’s cinnamon raisin Ezekiel bread used here)
3/4 cup milk of choice
1 tbsp ground cinnamon
1/4 cup chickpea flour (I used Bob’s Red Mill- seriously the best!)
1 tbsp plant based butter
maple syrup to drizzle on top
Instructions:
1. Combine your milk, ground cinnamon, and chickpea flour in a bowl (make sure it’s big enough to fit your bread slices!) and whisk well.
2. Coat your bread slice in the mixture on both sides.
3. Heat about 1 tbsp of plant based butter on a skillet over medium heat and add your bread slices.
4. Flip when they start to sizzle and cook until both sides are golden brown. Top with more cinnamon, blueberries, banana, and pure maple syrup!
