When all you want is a bakery-style blueberry muffin (but you’re too lazy to buy one or make a batch in the oven), this microwave blueberry muffin in a mug is for you! You can make pretty much any kind of muffin flavor your heart desires using just your microwave. For me, blueberry was on my mind today 😍 This was the perfect little treat to wake up to this morning. Microwave Blueberry Muffin in a Mug
Ingredients:
Wet:
1 ripe banana
1 tbsp milk of choice
1/4 tsp vanilla
1 tbsp unsalted peanut butter
sprinkle of cinnamon
handful of fresh blueberries
* optional: about 1 tbsp or more of maple syrup if you prefer sweeter!
Dry:
1/3 cup oat flour (or rolled oats blended)
1/2 tsp baking powder
Instructions:
1. Start by mashing the banana in a separate bowl. Add in all wet ingredients but save the blueberries for the end.
2. Mix until combined and add your dry ingredients to the same bowl. Stir until smooth! Add in the blueberries next.
3. Pour your batter into a microwave safe mug – the wider the mug, the better – and microwave for 1-2 minutes. This part is tricky because you do NOT want to overcook! I started at 1 minute, then gradually microwaved in 15 second intervals until it looked cakey and cooked around the sides. The outside of the muffin should appear slightly more golden brown compared to the middle and your blueberries will be perfectly melted!
4. Let cool because it will be steaming when it comes out. Enjoy for breakfast, snack, or dessert!
